About The Founder

New York based Emmy Award winning journalist Chef DonClark prompted by nothing more than an “I can do it better” attitude — decided to design a plantain smasher that . . . well, worked and didn’t come apart after a few uses, and that would be time efficient for the busy cook: smash more that one toston at a time. After a few demos, the eco-friendly, dual purposed Tostobueno® The Ultimate Tostonera® was born. Shape three tostones or three toston cups at with one press! After a great kickoff in Harlem, NY and brisk sales online and at pop-up stores around the trio-state area and South Florida, he decided to tackle another Caribbean love, the HOT SAUCE. He introduced his Hot Sauce with Attitude line: Habanero, jalapeno, and guajillo peppers start the fire. And the flavors of mango, pineapple and tamarind create a full bodied hot sauce with the laid back attitude of the Caribbean.  Chef DonClark also dabbles in the foods he grew with in in rural Kansas when the cooking bug bit him. The smells of chicken and catfish frying. The buttery goodness of mashed potatoes slathered with white gravy accompanied by flaky biscuits or golden sweet cornbread made Sunday dinners the main event of the week. From the first batch of green beans, he was smitten. He would hang close to my grandmother’s elbow watching intently as the she fried up bacon and magically whipped up golden brown pancakes.

Those dishes now a staple during the holidays are accompanied by the cakes and pies and cookies he also makes in small batches, becoming a food favorite to those who have discovered the magic in his Harlem kitchen. 

Now you too can experience what his fan base knows: there is nothing like Chef DonClark’s small batch cooking. Really! There isn’t. In small batches, NOTHING gets lost in translation.
